Welcome to our website. Revel in the anticipation as you prepare the meal, the delicious aromas reaching your nose and making your mouth water. Then, tuck in, and enjoy, savouring the flavours and sitting back at the end of the meal feeling contented, and let your mind wander back to happy times in good old Blighty. Or better still, share the event with friends and double the satisfaction. Why not try this recipe for rich beef stew with dumplings. Preparation time is less than thirty minutes and cooking time is two hours. For the stew to serve four to six people, you will need: 750g/1½lb shin of beef (shin is one of the cheapest cuts of beef and comes from the foreleg. It needs long slow cooking but has a superb flavour. Use it in casseroles and stews - it makes the most delicious gravy because the connective tissue in it turns to gelatine, thickening and flavouring the sauce) or stewing steak; 500g/1lb small onions, sliced; 40g/1½oz dripping; 1 tablespoon of flour; 900ml/1½ pint hot water; salt and freshly ground pepper; 500g/1lb carrots, halved lengthways; 1 bay leaf. For the dumplings, you will require: 175g/6oz self-raising flour; 75g/3oz shredded suet; 1 tablespoon of parsley (there are two main varieties: curly leaf and flat leaf. Both can be used for the same purposes, although flat leaf parsley has a stronger flavour and tends to be favoured in Mediterranean cooking), finely chopped; good pinch salt and pepper; water, to mix. To prepare the stew, remove any gristle and surplus fat from the meat and trim into neat 4cm/1½in cubes. Next, fry the meat and onions in the dripping until lightly browned all over. Sprinkle in the flour and mix well. Gradually stir in the water and continue stirring until it boils. Season to taste. Cover and simmer very gently for 1 hour. Then add the carrots and bay leaf and simmer for a further hour, when it will be time to add the dumplings. To make the dumplings, sieve the flour into a bowl and add the suet, parsley, salt and pepper. Next add enough water to make a soft but not sticky dough, about 3 tablespoons full should suffice. Lightly flour your hands and roll the dough into eight small balls. Add to the stew and cook for a further 15-20 minutes.
